Ingredients: 1 bottle Pisco (750 ml) 12 lemons 2 cups sugar (approx.)
Directions: Makes about 10 drinks. Squeeze lemons to generate about 4 cups lemon juice. Mix sugar into lemon juice. You can’t use too much sugar; just keep adding until no more will go into solution. Extract egg white from egg. Mix whole bottle of Pisco in cocktail shaker and whip with whisk. Mix in the lemon/sugar solution. Shake well and serve straight up or over ice. Note: Best consumed sitting down.
Comments: Pisco is a brandy or 'aguardiente' distilled from the white muscat grapes grown in two main regions of South America: the area around Pisco and the Valle del Río Elqui in central Chile. The Elqui Valley is called the "zona pisquera" due to its favorable geographic and climatic conditions and is the only pisco producing area in Chile. This Recipe "evolved" aboard Skip Novak's Pelagic Australis after dropping anchor in the kelp fields NE of Cape Horn after a rough passage across the Drake Passage from Antarctica.
