Ingredients: 1 1/2 tsps active dry yeast 2 Tbsps + 1 1/4 cups warm water 2 Tbsps honey 1 Tbsp oil 1/2 tsp salt 1 cup flaxseed meal 3/4 cup whole wheat flour 1/4 cup Teff flour 1/4 cup Quinoa flour 1 3/4 cup white flour
Directions: In a large bowl dissolve the yeast in 2 Tbsps of the water. Set aside for about 5 minutes or until bubbly. Mix in honey, oil, salt and remaining 1 1/4 cups water. Add flaxseed meal, whole wheat, teff and quinoa flours. Add 1 cup of the white flour. Stir in enough of the remaining 3/4 cup white flour to make a soft dough. Turn out the dough onto a lightly floured surface. Knead for 10 minutes or until smooth and elastic. Coat a 9"x5" loaf pan with cooking spray. Shape the dough into a loaf and place in the pan Cover and let rise in a warm place until doubled in bulk, about an hour. Bake at 350 for about 35-40 minutes, or until the loaf is browned on top and sounds hollow when tapped. Remove from oven and let cool.
Comments: If you don't have Teff or Quinoa flour available other whole grains can be used or just substitute whole wheat flour. My boat oven quicks faster than any oven I've used on shore so make sure you check your bread at 30 - 35 minutes so not to overcook it.
