Ingredients: 1 1/2 tsps active dry yeast
2 Tbsps + 1 1/4 cups warm water
2 Tbsps honey
1 Tbsp oil
1/2 tsp salt
1 cup flaxseed meal
3/4 cup whole wheat flour
1/4 cup Teff flour
1/4 cup Quinoa flour
1 3/4 cup white flour
Directions: In a large bowl dissolve the yeast in 2 Tbsps of the water. Set aside for about 5 minutes or until bubbly.
Mix in honey, oil, salt and remaining 1 1/4 cups water. Add flaxseed meal, whole wheat, teff and quinoa flours. Add 1 cup of the white flour.
Stir in enough of the remaining 3/4 cup white flour to make a soft dough. Turn out the dough onto a lightly floured surface. Knead for 10 minutes or until smooth and elastic.
Coat a 9"x5" loaf pan with cooking spray. Shape the dough into a loaf and place in the pan Cover and let rise in a warm place until doubled in bulk, about an hour.
Bake at 350 for about 35-40 minutes, or until the loaf is browned on top and sounds hollow when tapped. Remove from oven and let cool.
