Vegan, Gluten Free Baked Oatmeal

Ingredients: 2 C rolled oats 1 C steel cut oats (or more rolled oats) 3 C boiling water 1 - 3 medium apples 2 - 3 medium bananas 1 C raisins, craisins or other dried fruit 1/2 C milk, plant milk or water 6 T maple syrup or 1/4 packed brown sugar 1 T cinnamon 1 1/2 T vegetable or olive oil  1 t vanilla 1/2 t salt 1 C walnuts or pecans, optional
Directions: Put oats in a large heatproof bowl. Add boiling water, stir, cover and let stand 15 minutes. Preheat oven to 350. Spray a 9 x 9 dish with PAM or grease lightly. Peel apples, mash bananas and stir into oatmeal. Add remaining ingredients, except nuts. Mix well, pour into prepared pan and sprinkle nuts evenly over the top. Bake for 45 minutes until golden brown. It can be cut into squares for serving. Serve hot or cold. Optional: 1. Add 1/4 t baking soda and 1/2 t baking powder. 2. Mix 1 T sugar and 1/4 t cinnamon with nuts. 
Comments: This recipe is gluten free, low fat and also vegan, if plant milk or water is used. It is a compilation of recipes explored on several vegan websites and served to friends who prefer vegan foods. We will make it on board again!
