Crustless Pumpkin Pie

Ingredients: 15 oz can pumpkin, Goya is very good
3/4 C white sugar
1 t pumpkin pie spice
1/2 t cinnamon
1 T flour
1/2 t salt
2 eggs
1 12 oz can evaporated milk
Directions: 1. Preheat oven to 425. Lightly butter a 9-inch pie pan
2. Combine sugar, salt, cinnamon, pumpkin
pie spice and flour in a small bowl.
3. Beat eggs lightly in a large bowl. Stir in pumpkin and spice mixture. Gradually stir in milk. Pour into pan.
4. Bake for 15 minutes. Reduce temperature to 350. Bake for 35 - 40 minutes until knife inserted in the center comes out clean.
5. Cool for 2 hours, then serve or refrigerate.
