Ingredients: 1 can garbanzo beans (reserve liquid) 1/4 c. tahini (sesame seed butter) 3 T. lemon juice 1 lg. clove garlic 1/2 t. cumin salt & pepper to taste
Directions: Blend, food process, or mash with a potato masher adding 1/4 c. reserved bean liquid. More or less liquid depending on how thick you like your hummus.
Comments: This is a very flexible recipe. Easily doubled. Add variations like bottled red peppers, sundried tomatoes, basil, or any other flavorings that suit your pantry. Tahini is readily available in larger grocery stores.
Buffalo Chicken Dip

Ingredients: 1 10 oz. can chunk chicken, drained 1 8 oz. cream cheese, softened 1 C ranch dressing 3/4 C hot pepper sauce (Texas Pete's) 1 1/2 C shredded cheddar cheese 1 bunch celery, cut into 4 inch pieces Crackers
Directions: Heat chicken and hot sauce in a skillet over medium heat until hot. Stir in cream cheese, then ranch dressing. Continue stirring till warm and blended. Add half the cheddar cheese and stir well. Pour into a small baking dish and sprinkle remaining cheese on top. Bake at 350 until bubbly and hot.
Comments: This recipe works well with Kirkland (Costco) brand chicken. I use low fat cream cheese, dressing and cheddar cheese.

Ingredients: 1 jar or can of Nacho Cheese Dip 1 Can of Hormel Hot Chili with Beans
Directions: Open the can of Hormel Hot Chili with Beans and heat up in a sauce pan... After its hot, blend in jar of cheese dip, heat up and serve with Tortilla Chips.

Puget Sound Asparagus Roll Ups

Ingredients: Cream Cheese (Spreadable) 16 oz Sandwich Style Ham Slices 12-24 depending on size Pickled Asparagus Spears 24
Directions: Spread cream cheese over shortest lengh of ham, both ends if possible, I use the large rectangles, then cut in half. The asparagus spear goes on top of the cream cheese and roll it up. Serve as cold as possible or keep in shade. Two roll ups a piece as a serving. Too easy.
Comments: I buy the asparagus spears and ham at Costco. We always have this on our annual trips up to the San Juans or while cruising at home around Vashon Island. The kids love this one as much as the adults.

Ingredients: 12oz. Jar of Salsa 8 oz. of Lobster 1 tsp. Lime or Lemon Juice 2 tsp. Horseradish Optional
Directions: In a medium size bowl combine all ingredients. Chill and then serve with favorite chips.
Comments: Totally put together on the fly, but turned out great!

Ingredients: 1 can crab 8 ox cream cheese horseradish catsup
Directions: Open cream cheese and put it on a dish. mix together horse radish and catsup empty can of crab on top of cream cheese pour cocktail sauce on top serve w/ crackers
Comments: This recipe has been around for 30 years or so that I know of. We like it w/ lemon vodka and tonic

Ingredients: 1 Can white tuna 1/4 cup Craisins 1/2 Cup shopped celery 2 Tbs Sour cream 3 Tbs Mayonnaise Salt and Pepper to taste Tabasco to taste
Directions: Mix all ingredients and refrigerate. Serve with toast or crackers.
Comments: We had company yesterday and I just made this recipe up and turned out to be great! Everyone loved it. The difference was on the sour cream and craisins.
BBQ Dogs for Hors D'oeuvres

Ingredients: I jar prepared tomato sauce 1 can whole berry cranberry sauce 2 pkg hot dogs cut into bite size chunks
Directions: heat tomato and cranberry sauces together until blended. drop in dogs and simmer until hot.

serve with toothpicks.
Comments: This simple sauce works well with almost any cooked sausage or small meatballs.

It is delicious as a main course atop cooked rice.
Cheddar & Pickles on a Ritz

Ingredients: Ritz crackers cheddar cheese slices Midget sweet pickles
Directions: This may sound strange, but its a favorite in the cockpit at cocktail hour. Just put a slice of cheddar on a Ritz, slice the sweet pickle in half and place on top of the cheese. Place in oven long enough to melt the cheese and serve.
Comments: This was first shared with me be my sailing mentor on a Catalina trip.
Guacamole Dip

Ingredients: 5 to 6 avacados 1 large tomato 1 large onion 1 Tbs. lemon juice salt pepper garlic powder tortilla chips
Directions: Peel and mash avocados with a fork. Finely chop tomato and onion. Stir together all ingredients. Season to taste. Chill for 8 hours!
Comments: Easy to make. To stretch this recipe, add cottage cheese.
