French Bread

Ingredients: 1 pkg dry yeast 1/4 C luke warm water 1 C boiling water 1 Tblsp Butter 2 tsp Salt 1 Tblsp Sugar 3/4 C Cold water about 6 C flour oil 1 egg white beaten
Directions: Sprinkle 1 pkg dry yeast on 1/4 c luke warm water in a small bowl. Let stand 5 minutes and stir until dissolved. Pour 1 C boiling water over 1 Tblsp butter, 2 tsp salt, & 1 tblsp sugar in a large bowl. Add 3/4 C cold water, stir and let cool until lukewarm. Stir in yeast. Gradually beat in enough flour to form a stiff dough (6 c more or less). Turn out on a floured board and knead until smooth and satiny, adding more flour if necessary. Dump in a large greased bowl, oil the top, cover with a towel and let rise until double in bulk. Beat down and shape into two oblong loaves about 14" long. Place on a greased baking sheet and let rise until double. Beat 1 egg white frothy and brush the tops of the loaves. With a razor make 3 slashed across tops. Bake at 425 deg for 30 minutes. Reduce heat to 350 deg and bake 20 minutes more until well browned. Break bread away from pans to cool.
Comments: Our daughter made this version of French bread when we couldn't get the real thing. It was every bit as tasty as that you can buy on the French islands of the Caribbean and much better than you get on the English island. It really wasn't as hard as it sounds. Try it, you'll like it!
Homemade Pizza Dough

Ingredients: 1 package active dry yeast 1 tblsp sugar 1 cup warm water (105F-115F) 3 cups all-purpose flour, divided 1/4 tsp salt 1 tsp olive oil vegetable cooking spray 1 tblsp yellow cornmeal
Directions: Combine first 3 ingreadients in a 2-cup liquid measuring cup; let stand 5 minutes. Combine yeast mixture, 2 3/4 cups flour, salt, and olive oil in large bowl, stirring to form a soft dough. Turn dough out onto a lightly floured surface. Knead until smooth and elastic (about 5 minutes); add enough of remaining 1/4 cup flour, 1 tablespoon at a time, to keep dough from sticking to hands. Place dough in a bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85F), free from drafts, 1 hour or until doubled in bulk. Punch dough down and divide in half. Roll each half of dough into 12-inch circle on a lightly floured surface. Coat 2 (12-inch) pizza pans or baking sheets with cooking spray; sprinckle each with 1/2 tablespoon cornmeal. Place dough on prepared pans. Crimp edges of dough with fingers to form a rim. Cover; let rise in a warm place free from drafts for 30 minutes. Top and bake according to recipe direction.
Comments: It is easier to call Pizza Hut but when you are in that remote anchorage and craving fresh pizza, this is the way to go. Add your favorite toppings. Yummy.

Ingredients: 1 can warm beer 3 cups flour 2 Tblsp baking powder 3 Tblsp sugar
Directions: Mix all ingredients together and place in a greased baking pan. Allow to set up for one hour. Bake at 400 degrees for 30 minutes
Comments: OK, you really want fresh bread but you are too lazy to knead it. This is a quick and dirty recipe that is so easy yet tastes great!

Ingredients: 3 C. Self-rising Flour 2 Tbsp. Sugar 1 12 Oz. Beer 7 Tbsp. Melted Butter
Directions: Pre-heat oven to 350. Mix flour, sugar & beer. Put mixture in greased bread pan. Spread 4 Tbsp. of heated butter over bread in pan and place pan in oven. Cook 20 minutes then remove and put remainder of melted butter on top and cook additional 20 minutes. Check with toothpick, if it comes out clean......... set to cool.
Comments: Reipe STOLEN from Downwind Marine, San Diego. Became a favorite in the Sea of Cortez. When you take it out of the oven plan to allow it to cool for as long as you can stand it. It smells so good you won't want to wait.
Pelagic Australis One Watch Bread

Ingredients: 2 cups fresh water 2 tsp. salt 1 packet (2 heaping tsp.) dry yeast 1/4 cup of either sugar, honey, molasses, maple syrup, or brown sugar 5 or 6 cups of any sort of flour Some olive oil or vegetable oil A bit of margarine or butter
Directions: Pour water into a large stainless steel bowl. If fresh water is scarce you can substitute for the f. water and salt with 2/3 cup salt water and 1 1/3 cups fresh water. Water should be between 90 -100°F (32 - 38°C), or comfortable on a bare wrist. Stir in salt, add yeast and stir until it dissolves. Add sugar and then flour. Stir the flour in with a wooden spoon until the mix is too stiff to handle, then coat your hands with olive oil or vegetable oil to prevent the dough from caking on them and start working the last cups of flour in with your hands. There is no exact measurement on the flour because humidity affects the amount you'll use. Keep adding flour until the dough feels smooth and consistent and doesn't stick to a clean finger when you press it firmly. Form dough into a ball in the middle of the bowl. Cover the bowl with a towel and put it in a warm, dry place to rise. The engine room after it has been running or warm place on the stove works well. You need a temperature between 80 - 100°F (27°C - 38°C) at this stage. If you are in a cool climate, turn the oven on for three minutes. Turn it off and then let the dough rise in the oven. At 30 minutes, check the dough. If it hasn't started growing, it is in too cool a place. If it's starting to get a crust, it's too warm. At 40-45 minutes, the dough should double in volume. When it has doubled in size, punch it down by hitting it with your fist four or five times and then put in bread pans greased with margarine or butter and let it rise again for another 40-45 minutes. Place bread pans in a cool oven. Turn the heat on to 350°F (180°C) and bake until the loaves are golden brown, or about 30-35 minutes. Turn the bread pans at least once during the process to assure an even brown color. Rap with a knuckle and if it sounds hollow it is done. Let bread cool in pans for 5-6 minutes, then remove it from the pan and rest it on its side or set the loaf on a cake rack so the steam escapes from the bottom. Wait at least 15 minutes to cut the loaves.
Comments: The basic recipe was from Lin Pardy. It was adapted for cold climates while on a voyage aboard Skip Novak's Pelagic Australis from Tierra del Fuego to the Antarctic Peninsular and Cape Horn
Dancing Babe Bread

Ingredients: 3 cups flour 1 1/2 cups very warm water packet of dry yeast 1/2 tbsp. salt 2 tbsp. flax meal
Directions: Dancing Babe Bread - because you can do this while dancing around the boat. It's so easy, no kneading! Mix flour, salt and flax meal(optional) in a large mixing bowl. Add dry yeast to very warm water and dissolve. Create a dip in the flour and mix in the water with a spoon until you have a fairly sticky mass. Next comes the one time you may have to get one hand dirty - finish blending the ingredients with your hand until you have a fairly smooth dough. One minute tops! That's it. Cover the bowl with a clean, damp towel and find a place where your dough can rise draft-free for two to six hours. Add to a loaf pan. Bake for 20 to 30 minutes in a 450 degree oven, until crust is golden brown. If possible add a shallow dish of water on the very bottom of your oven to improve humidity. I just took a bread out of the oven to which I added 1 1/2 tbsp. of crushed rosemary instead of flax meal. Awesome. You could also substitute 1/2 cup of white flour with whole wheat flour. Let's go dancing!

OLD: Sandwich Bread with Oatmeal

Ingredients: 1 1/2 cups Warm Water (115 degrees) 4 tsp Dry Yeast 1 tsb sugar 4 cups Flour (can be 2 whole wheat, 2 flour) 1/2 cup Oatmeal 2 Tbls Sugar 2 tsb salt (more or less to taste) 4 Tbls Oil add after all dry is mixed
Directions: Add yeast to warm water (115 degrees F) and about 1 tsp of sugar and let sit for 5 minutes. Proof your yeast to make sure it is ok. Is so, it will bubble up.

Mix dry ingredients less about 1 cup flour, keep aside for kneading. Add yeast & water that was mixed, add oil. Knead dough until smooth. Add rest of flour while kneading to get a good bread dough consistency. Add more flour if needed
Lightly coat a bowl with oil and place kneaded dough in it and roll around so dough is coated with the oil..
Cover and place in a warm area and let rise to double size, about 40-60 minutes. Press gas out, and lightly knead dough to remove gas, cut in half and knead/roll it into 2 loafs. Place each loaf into greased bread pans. Cover and let rise again in a warm place til pan is filled. 45-60 min.
Bake at 325 degrees for about 25 minutes. Loaf should sound hollow when tapped and be lightly brown on top.

Note: You also can keep this as one large loaf and bake it as one.
Comments: This bread is very nice and easy to make, the dough is smooth and consistent.
Sandwich Bread, Single Rise

Ingredients: In a large bowl 2 packs of rapid rise yeast 3 Tbs sugar 1 Tbs salt 3/4 cup oatmeal 6 cups bread flour, (hold 1/2 cup back for kneading) Mix dry ingredients well Add Water & Oil 2 1/4 cups water at 120 degrees 5 Tbl oil
Directions: 1. Mix dry ingredients well
2. Add water and oil
3. Knead until smooth, add flour as needed.
4. Divide into two loaves
5. Knead and roll into loaves
6. Place in 9 x 5 bread pans, let rise until over the top. (Spray pans with pam)
7. Bake at 375 25 minutes until lightly brown on top.

Turn out and enjoy!

Ingredients: In a large bowl 2 packs of rapid rise yeast (Note: a pack of yeast is 1/4 oz or it measures 2 1/4 teaspoons) 3 Tbs sugar 1 Tbs salt 3/4 cup oatmeal 3 cups of whole wheat flour (or use regular flour) 3 cups of bread flour Mix dry ingredients very well Water & Oil 2 1/4+ cups water at 120 degrees 5 Tbl oil Mix water and oil together, then add to dry
Directions: 1. Mix dry ingredients well, mix a lot 2. Pour mixed water/oil into dry 3. Knead until well mixed 4. Add flour to kneading until not sticky 5. Let dough rest 15 min, this allows yeast to kick off 6. Prepare 2 bread pans, spray with Pam 7. Remove dough ball, cut in half 8. Knead each half into loaf shapes 9. Place in bread pans 10. Let rise 60 minutes, (being only 3 cups of flour per loaf, these will just rise over the top of the pan) 11. Bake 20-25 min at 350-375 until light brown on top. (I bake 15 minuets then turn them for even heat) 12. Turn out, cut in half to check center is fully cooked, if not return to oven. 13. When finished.....try NOT to eat half a loaf :-) Note: Turn bread pans at midway baking time for more even baking

Multi Grain Bread

Ingredients: 1 1/2 tsps active dry yeast 2 Tbsps + 1 1/4 cups warm water 2 Tbsps honey 1 Tbsp oil 1/2 tsp salt 1 cup flaxseed meal 3/4 cup whole wheat flour 1/4 cup Teff flour 1/4 cup Quinoa flour 1 3/4 cup white flour
Directions: In a large bowl dissolve the yeast in 2 Tbsps of the water. Set aside for about 5 minutes or until bubbly. Mix in honey, oil, salt and remaining 1 1/4 cups water. Add flaxseed meal, whole wheat, teff and quinoa flours. Add 1 cup of the white flour. Stir in enough of the remaining 3/4 cup white flour to make a soft dough. Turn out the dough onto a lightly floured surface. Knead for 10 minutes or until smooth and elastic. Coat a 9"x5" loaf pan with cooking spray. Shape the dough into a loaf and place in the pan Cover and let rise in a warm place until doubled in bulk, about an hour. Bake at 350 for about 35-40 minutes, or until the loaf is browned on top and sounds hollow when tapped. Remove from oven and let cool.
Comments: If you don't have Teff or Quinoa flour available other whole grains can be used or just substitute whole wheat flour. My boat oven quicks faster than any oven I've used on shore so make sure you check your bread at 30 - 35 minutes so not to overcook it.
