Lemon Ricotta Pancakes

Ingredients: 3 eggs, whisked
3/4 C ricotta, drained in a sieve for 30+ min.
3 T butter, melted
1/4 t vanilla
6 T almond flour or 3 T almond & 3 T white flour
1 T sugar
1/4 t baking soda
1/4 t baking powder
scant 1/2 sea salt
zest of 1 lemon
Directions: Warm skillet or electric skillet to 325.
Wisk together dry ingredients in a small bowl and set aside.
Wisk together wet ingredients in a medium bowl.
Gently stir dry ingredients into wet until blended.
Melt some butter in skillet and pour in batter using 1/4 C measuring cup.
Cook until bubbles form across the surface. Flip and cook for a shorter time.
Enjoy immediately!
